Starwhite Cluster Sunchoke
Starwhite cluster is uniform in color (hazel) and has a mild, nutty flavor. There are various sizes of tubers from small to medium all with a few nodes. It's not sweet, but has a nice mild flavor with a hint of pine. This selection produces dense clusters of tubers which are very easy to clean. This selection is a form we bred here at our farm and was selected due to its yield, dense clusters and mild flavor. It is similar in some ways to Stampede but without the knobs. Teh color is pure white and very clean looking. Many of the tubers are perfectly round. Under cultivation it works well in pots and produces smaller tubers that are easy to use compared to the big ones. (Ships dormant in spring and fall from Oct. to Dec.and again March to May.)
