This sunchoke has a large pinecone shape and a strong, nutty flavor. It's not a sweet one, but has a very earthy flavor and is very large in size. Truly looks like something from outer space as the giant tubers take on a life of their own in terms of growth habit. Give this plant lots of room and the tubers can grow to large size 2-3 times the size of other sunchoke varieties easily. This species has a strong stem structure as well. Each tuber would be a meal with this one. The flavor is best in spring. Sometimes we have to split the tubers before packaging. This does not interfere with the yields in the first year at all. There are additional smaller but more round tubers that form on the underground roots as well which are not very knobby making them easy to clean.
